Caol Ila, founded in 1846, stands as one of Islay's most iconic distilleries. After gaining prominence through Diageo's Flora & Fauna and Rare Malts series, Caol Ila was officially launched as a standalone single malt whisky brand in 2002, introducing a comprehensive core range. Today, approximately 15% of the distillery's production is reserved for single malt bottlings, while the majority serves as crucial components in Johnnie Walker blends, particularly the flagship Black Label. This strategic importance led Diageo to select Caol Ila as one of four distilleries for its £1.5 billion Four Corners project, alongside Cardhu, Clynelish, and Glenkinchie. The initiative includes a major visitor center upgrade, with Caol Ila representing the signature peated character of Johnnie Walker. The new visitor experience, opened in 2020, features a tasting bar with panoramic views of the Sound of Islay, a dedicated parking area connected by a pedestrian bridge leading directly to the facility. The distillery operates with a 12.5-tonne full-lauter mash tun, eight wooden washbacks (two updated in November 2019) and two stainless steel washbacks, along with three pairs of stills. Production schedules vary between five and seven days weekly, yielding 16 to 26 mashes respectively. Fermentation times range from short (55 hours) to long (120 hours) periods. While renowned for its distinctive peated style, Caol Ila also produces an unpeated variant, both distilled to 72-63% ABV. The core range includes Moch (NAS), 12-Year-Old, 18-Year-Old, and 25-Year-Old expressions, plus the Moscatel-finished Distiller's Edition and cask strength releases. Special editions include the 2019 Feis Ile 10-Year-Old, matured in American oak ex-bourbon and refreshed European oak casks, and the 2018 Diageo Special Releases featuring both an unpeated 15-Year-Old and an exceptional 35-Year-Old peated expression.

Bloody hell, this one’s absolutely unstoppable, so very spirity right from the first sniff 😮 You get bright citrons, a little hint of parsley to start, then that menthol kick cuts through, all that lovely deep gold in the glass too. Sipping it, first there’s that clean manzanilla brine, then odd little whiffs of exhaust fumes pop up, cured ham, kipper smoke, all finely smoky with soot and pine wood smoke drifting through. Mid palate brings out liquorice wood, candied kumquats, Seville oranges screaming bright, beeswax, tobacco, that massive earthiness and big beast power just sitting under everything. The longer it sits the smoother it gets too, surprisingly. Finish is ridiculously long, lingering peat, ash, coal notes, mentholated again, perfect balance between all that raw power and the zingy citrus. It even distorts the spirit a bit by the end, glorious unfolding the whole way through. Proper cracking dram if you ask me 🥃

Right then, poured a dram. Deep gold colour, lovely. First sniff... wow, huge smoke hits you straight away. Like bonfires and ashtrays, but in a good way. There's this real cured ham and kippers thing going on, almost savory. Getting whiffs of exhaust fumes too, bizarrely. And menthol? Yeah, a fresh kick under all that peat. First sip is powerful, absolutely unstoppable. Massive coal and wood notes, like licking an old fireplace. Then it evolves - candied walnuts, old dry sherry, a touch of soy sauce saltiness. The smoke is huge but there's a perfect balance with citrus. Lemons and kumquats are screaming out from the background, cutting through beautifully. Even a bit of parsley freshness. Wow, it just keeps unfolding. Mission accomplished in my book. Fab stuff. Long, long finish of liquorice wood and cigars. That beeswax smoothness comes through at the very end. A proper big beast of a dram. 😌

Wow, this one's a proper big beast straight away! Deep gold in the glass, and the nose hits you with this huge smoke and pine wood smoke—proper camping fire stuff. There's a whiff of exhaust fumes and coal smoke, but then it flips to Seville oranges and a hint of candied sweetness. Tastes very spirity at first, but then the peat and finely smoky notes kick in, mixed with walnuts and ash—massive earthiness, like a forest after a fire. The beeswax and liquorice wood add this strange, almost tobacco-like chewiness, while kippers and cured ham sneak in for a salty kick. Citrons and kumquats are screaming in the background, and just when you think you've got it figured, a cough syrup tang and parsley freshness hit. The manzanilla and old dry sherry vibes are there too, swirling around like myriads of other things. It's got huge power but somehow holds perfect balance, smooth yet unstoppable. That long finish wraps it up with a gloriously unfolding smoky trail. Proper fab dram, mission accomplished!

I'm getting kippers and cured ham, then suddenly sweet citrons and Seville oranges pop through. The old dry sherry influence is there, grounding it all. Palate is huge power, but wow, it's somehow smoother than the nose suggested. Wood and liquorice wood, walnuts, beeswax... myriads of other things keep unfolding. A fab, glorious unfolding. There's a slight touch of soy sauce and parsley too? Unstoppable, really. Perfect balance in the end. Mission accomplished. 🥃
