Caol Ila, founded in 1846, stands as one of Islay's most iconic distilleries. After gaining prominence through Diageo's Flora & Fauna and Rare Malts series, Caol Ila was officially launched as a standalone single malt whisky brand in 2002, introducing a comprehensive core range. Today, approximately 15% of the distillery's production is reserved for single malt bottlings, while the majority serves as crucial components in Johnnie Walker blends, particularly the flagship Black Label. This strategic importance led Diageo to select Caol Ila as one of four distilleries for its £1.5 billion Four Corners project, alongside Cardhu, Clynelish, and Glenkinchie. The initiative includes a major visitor center upgrade, with Caol Ila representing the signature peated character of Johnnie Walker. The new visitor experience, opened in 2020, features a tasting bar with panoramic views of the Sound of Islay, a dedicated parking area connected by a pedestrian bridge leading directly to the facility. The distillery operates with a 12.5-tonne full-lauter mash tun, eight wooden washbacks (two updated in November 2019) and two stainless steel washbacks, along with three pairs of stills. Production schedules vary between five and seven days weekly, yielding 16 to 26 mashes respectively. Fermentation times range from short (55 hours) to long (120 hours) periods. While renowned for its distinctive peated style, Caol Ila also produces an unpeated variant, both distilled to 72-63% ABV. The core range includes Moch (NAS), 12-Year-Old, 18-Year-Old, and 25-Year-Old expressions, plus the Moscatel-finished Distiller's Edition and cask strength releases. Special editions include the 2019 Feis Ile 10-Year-Old, matured in American oak ex-bourbon and refreshed European oak casks, and the 2018 Diageo Special Releases featuring both an unpeated 15-Year-Old and an exceptional 35-Year-Old peated expression.

Thisdram pours a bright gold, reminds me of a fresh cider with a hint of almond peelings and a touch of fino‑style nuttiness, walnuts peeking through. There’s a bandage‑like iodine note, a wee medicinal side that fades into more oak impact – quite big on the palate, almost ale‑rich, niiice! A spoonful of miso soup umami lingers, never got sweetish, just perfect with lemon zests cutting through. The finish is rather long, super good, with a coastal arrival of seaweed and a mustardy kick. 🥃

Right, just had a go at this and crikey, it’s rather good 😮 That coastal arrival hits you first with that lovely fino-style salty tang, mixed with bright Seville orange zest and lemon zests, plus wee hints of seaweed and sooty seawater that feels like standing on a cliff edge on a blustery coastal day. Got a wee medicinal side that’s not overpowering at all, plus all those nutty notes – almond peelings, walnutty bits, even a touch of smoked almonds and broken branches that give it a proper earthy, woodland vibe. There’s a little mustardy kick, a spoonful of miso soup savouriness, even a nod to fresh oysters and that fortified Manzanilla depth. The finish is rather long, never gets sweetish at all, bordering total perfection honestly. I swear I can even pick up wee traces of tiny oak shavings, and that “drop the tofu” line popped in to my head for some random reason too – no clue why, just does. Perfect, very excellent stuff, nice! 🥃

Aye, this one’s a proper treat – hits the nose with a lovely gold hue and a wee medicinal side that’s oddly comforting. First sip’s got these sharp Seville oranges and lemon zests dancing around, like a bandage of citrus zest peeling back to reveal something deeper. There’s a walnutty richness, almost like smoked almonds and broken branches, with a subtle iodine kick that screams coastal arrival. The mustardy warmth builds slowly, lingering in a rather long, oaky finish – think tiny shavings of oak and a spoonful of miso soup for depth. Nice! It’s bordering total perfection, really. The sour fruits and seaweed notes tangle beautifully, like ale meeting cider in a storm. Some might say it’s a bit too much, but I found it super good – complex without trying too hard. A dram that sticks to your ribs, in the best way. 🥃

Oof, this is niiice! 😍 First sip hits like a spoonful of miso soup with a wee medicinal side—then BAM, mustardy punch, walnutty depth, and these tiny oak shavings dancing about. The finish? Coastal arrival, all sooty seawater and seaweed, with a hint of iodine lingering like a proper dram should. Golden hue, proper long, never got sweetish—just sour fruits, Seville oranges, and lemon zests playing tag with smoked almonds and almond peelings. The cider notes sneak in, then the fino-style finesse kicks in proper, bordering on total perfection. Quite big, very excellent, super good—wonderful stuff.

Right then, this one’s quite big on the nose. More oak impact for sure, with lemon zests and a wee bit of sour fruits. Taste-wise, it’s like a spoonful of miso soup with oysters... very savoury. Then comes that seaweed and iodine note, a slight bandages vibe with a wee medicinal side. Interesting! I get smoked almonds and a walnutty, fino-style thing going on. Never got sweetish, though. More Seville oranges and broken branches towards the end. There’s nice wee traces of tiny oak shavings in there too. Overall... wonderful! 👍 Very excellent drop.
