Caol Ila, founded in 1846, stands as one of Islay's most iconic distilleries. After gaining prominence through Diageo's Flora & Fauna and Rare Malts series, Caol Ila was officially launched as a standalone single malt whisky brand in 2002, introducing a comprehensive core range. Today, approximately 15% of the distillery's production is reserved for single malt bottlings, while the majority serves as crucial components in Johnnie Walker blends, particularly the flagship Black Label. This strategic importance led Diageo to select Caol Ila as one of four distilleries for its £1.5 billion Four Corners project, alongside Cardhu, Clynelish, and Glenkinchie. The initiative includes a major visitor center upgrade, with Caol Ila representing the signature peated character of Johnnie Walker. The new visitor experience, opened in 2020, features a tasting bar with panoramic views of the Sound of Islay, a dedicated parking area connected by a pedestrian bridge leading directly to the facility. The distillery operates with a 12.5-tonne full-lauter mash tun, eight wooden washbacks (two updated in November 2019) and two stainless steel washbacks, along with three pairs of stills. Production schedules vary between five and seven days weekly, yielding 16 to 26 mashes respectively. Fermentation times range from short (55 hours) to long (120 hours) periods. While renowned for its distinctive peated style, Caol Ila also produces an unpeated variant, both distilled to 72-63% ABV. The core range includes Moch (NAS), 12-Year-Old, 18-Year-Old, and 25-Year-Old expressions, plus the Moscatel-finished Distiller's Edition and cask strength releases. Special editions include the 2019 Feis Ile 10-Year-Old, matured in American oak ex-bourbon and refreshed European oak casks, and the 2018 Diageo Special Releases featuring both an unpeated 15-Year-Old and an exceptional 35-Year-Old peated expression.

This one's got a proper punch, innit? The colour's a pale straw, looks innocent enough, but don't be fooled. First sniff hits you with this smoky, almost lapsang souchong vibe – like burnt rubber and a hint of that old garage smell. Then there's this weird tang of tinned sardines and smoked oysters, real coastal and greasy all at once. On the tongue, it's drier than a Sunday sermon, with a briney kick and some bitter herbs that make your mouth water. The finish is long, mate, lingering like cough lozenges and eucalyptus, but somehow balanced between the smoke and those green, leafier notes. Nutty flavours pop up too, with a whisper of lemon and petrol – not sure how that works, but it does. Powerful dram, this. Straightens you right out, no messing. 🥃

Ooh, that’s a proper intriguing dram—lovely nose first off, like walking past a spice rack in some old apothecary. Then it hits you with that smokier edge, almost like smoked oysters left too long on the barbie 🔥 The dryness creeps in quick, a bit of petrol tang lurking behind the lemon peel and leafier herbs. You get these waxy notes clinging to the roof of your mouth, and then—bam—medicinal aftertaste kicking in like a cough lozenge that won’t quit. Still, it’s balanced in a weird way, smoke and bitter herbs duking it out but not going full brawl. Long finish too, with a salty breeze and a hint of ashes hanging around like you’ve just torched a bonfire in an old garage. Not exactly a cosy sip, but bloody fascinating all the same.

Then the nose opens up, all leafy herbs and something faintly medicinal, like cough lozenges left in a coastal breeze. Sip’s a proper powerful dram—drier than a desert, but with a greasy oil slick of smoke clinging to the tongue. There’s a fruity flash, quick as a lemon zest, before the bitter herbs creep in like a slow tide. Tastes like smoked oysters on a bed of ashes, with a long, salty finish that lingers like a lapsang souchong fog. Balanced enough, though—smoke and herbs wrestling, but never too heavy. Just enough petrol tang to keep it interesting, and a nutty whisper at the back like a campfire’s last embers. Lovely nose, but the palate’s got teeth.

Just knocked back a powerful dram and the nose hit me straight away – a lovely hint of eucalyptus and lemon, almost like a fresh coastal breeze. The colour is pale straw, a little waxy, reminds me of an old garage with tyre rubber in the air. On the palate it's dry and long, greening out into leafier herbs, a bit of brine and salty tinned sardines, even a whiff of anchovies in salt. There's a strong petrol note and a smoky classic lapsang souchton vibe that gets smokier as it goes on, balanced between the smoke and bitter herbs. The fruit side is subtle, a citrus bite, while nutty flavours and a hint of bitter ones round it off. Finish is a bit greasy, like smoked oysters and ash, leaving a medicinal aftertaste that lingers. All in all, a proper, straight‑forward, oily whisky that feels like a walk down a salty pier. 🍸

Right so poured myself a dram tonight, lovely nose straight away — really getting that lapsang souchong vibe with a touch of eucalyptus. Pale straw colour, looks quite innocent but don't let that fool you. First sip and it's quite oily, waxy almost. Then this wave of herbal stuff hits — leafy, green herbs with a bit of nutty flavour mixed in. There's something coastal about it too, reminds me of anchovies in salt or maybe brine on a harbour wall. Quite petrol-ish as well, like being in an old garage with tyres lying around 🤷‍♂️ The smoke is proper powerful, smokier than I expected honestly. Getting some lemon cutting through which is nice, keeps it from being too heavy. Bit of ash, bit of cough lozenges — that medicinal thing lingering at the back. The greasy, waxy texture carries those bitter herbs and smoky notes really well though. Smoked oysters and tinned sardines come to mind, like a seaside smokehouse or something. Finish is long and drier than the start. That brine and salt hangs about forever. Has a certain straightness to it, if that makes sense — not trying to be fancy, just doing its thing 💨 Proper dram for a cold evening this one. The balance between the smoke and the bitter herbs keeps me going back for more. Quite fruity underneath all that if you wait long enough. Aye, happy with this pour 👍
