Tomatin: In 2005, Tomatin decided to forge its own path. At year-end, they distilled a batch of whisky using Optic barley peated to 15ppm and filled them into various cask types. Eight years later, a distinctive Tomatin single malt brand emerged—Cù Bòcan. Over the following six years, the distillery released numerous expressions under this line. Despite its popularity, Tomatin felt it was time for a brand realignment. In summer 2019, three new Cù Bòcan whiskies launched: the core Signature, plus Creation #1 and Creation #2. Creation #1 is finished in a combination of Black Isle Brewery Imperial Stout casks and Bacalhôa Moscatel De Setúbal wine casks, while Creation #2 matures in Japanese shōchū casks and European virgin oak casks. The distillery features a nine-tonne full-lauter stainless steel mash tun, twelve stainless steel fermentation tanks (54-110 hour fermentation), and six stills. Its 2019 production target was 18 million liters, including two weeks dedicated to peated whisky production at 40ppm. The core range includes Legacy, 12, 18, 30, and 36 Year Old, plus Tomatin Cask Strength, Tomatin Port Cask 14 Year Old, and Tomatin First Fill Bourbon Cask UK Exclusive. The 30 Year Old joined in 2018. Limited releases feature the Five Virtues series (Wood, Fire, Earth, Water, Metal), each cask-finished for unique profiles. The Warehouse 6 Collection includes Tomatin 40 Year Old and the recent 1975 Oloroso Cask release. Tomatin 50 Year Old, one of the distillery's most historic releases, debuted in 2018. Travel retail exclusives include 8, 12, 15, and 40 Year Old expressions. The peated portfolio is represented by Cù Bòcan Signature, Cù Bòcan Creation #1, and Cù Bòcan Creation #2.

Blimey, this one’s a right punch in the face – powerful, no messing. First sip’s all grass and white wine, bright but sharp, like a summer garden after a storm. Then the fruit kicks in – mango, papaya, proper fruity one indeed – but don’t get comfy, ‘cause there’s this sneaky bird’s eye chilli lurking underneath, making your lips tingle. The honey sauce sweetness tries to calm it down, but the varnish and chalk keep things grounded, almost like bark and roots mixed in. Tomatin as we know – and live it – yeah, it’s got that grit. Lemons and carbon paper dry it out, so water is mandatory here, or you’ll be coughing like you’ve downed undiluted moonshine. This ain’t easy, but weirdly brilliant. 🌶️🍋

This one’s a proper punchy dram – fruitier than your average, with green apples and a touch of papaya dancing around. It’s got a bit more honeyed warmth, like someone poured honey sauce into a fruit salad and left it in the sun. The body’s a little rounder, but still packs a powerful kick, not for the faint-hearted. There’s a lot of grass and bark in there, almost like a walk through the Highlands after rain. The finish is sharp, with lemon juices and a hint of chilli heat, yet it stays bright and undiluted. Not sure if it’s the best use of water, but Tomatin as we know it lives up there – medium-bodied, but with a chalky edge and some cellulose sweetness. A fruity one indeed, though this one ain’t easy. 🥃

Right, so this one's a proper challenge neat — quite sharp, loads of grass and lemon juice hitting you straight away, almost like varnish at first. Definitely needs water, no question about it. Once you add a few drops it really opens up. Gets a little rounder, more honeyed, and suddenly there's this lovely fruit salad thing going on — green apples, a touch of mango, even some papaya sneaking in. Still grassy though, like freshly cut lawn on a summer day. There's something quite unusual in the background, a bit of chilli heat — not overwhelming, just a gentle bird's eye chilli tingle that keeps things interesting. Maybe some bark and that weird carbon paper note I sometimes get, almost chalky. Without water it's honestly a bit of a struggle, but with the right amount it becomes fruitier and brighter, almost like a crisp white wine. Honey sauce drizzled over tropical fruit. 🍯 This one ain't easy to figure out but it's definitely a fruity one indeed. Just gotta be patient with it.

It’s powerful stuff though, this one ain’t easy neat. Undiluted, you get a touch of papaya and then some chillies, like a bird’s eye chilli tickling the back of your throat. There’s chalk and a bit of bark, something woody like cellulose or a whiff of varnish. But add a drop of water? Best use of water, honestly – water is mandatory here. It opens up so fruitier, more honeyed with that honey sauce note, turns into a real fruity one indeed. The grass mellows, the lemon juices blend with a touch of mango, almost like a white wine brightness sneaking in. Still has that bold character though – Tomatin as we know and live it. 😅
