Caol Ila, founded in 1846, stands as one of Islay's most iconic distilleries. After gaining prominence through Diageo's Flora & Fauna and Rare Malts series, Caol Ila was officially launched as a standalone single malt whisky brand in 2002, introducing a comprehensive core range. Today, approximately 15% of the distillery's production is reserved for single malt bottlings, while the majority serves as crucial components in Johnnie Walker blends, particularly the flagship Black Label. This strategic importance led Diageo to select Caol Ila as one of four distilleries for its £1.5 billion Four Corners project, alongside Cardhu, Clynelish, and Glenkinchie. The initiative includes a major visitor center upgrade, with Caol Ila representing the signature peated character of Johnnie Walker. The new visitor experience, opened in 2020, features a tasting bar with panoramic views of the Sound of Islay, a dedicated parking area connected by a pedestrian bridge leading directly to the facility. The distillery operates with a 12.5-tonne full-lauter mash tun, eight wooden washbacks (two updated in November 2019) and two stainless steel washbacks, along with three pairs of stills. Production schedules vary between five and seven days weekly, yielding 16 to 26 mashes respectively. Fermentation times range from short (55 hours) to long (120 hours) periods. While renowned for its distinctive peated style, Caol Ila also produces an unpeated variant, both distilled to 72-63% ABV. The core range includes Moch (NAS), 12-Year-Old, 18-Year-Old, and 25-Year-Old expressions, plus the Moscatel-finished Distiller's Edition and cask strength releases. Special editions include the 2019 Feis Ile 10-Year-Old, matured in American oak ex-bourbon and refreshed European oak casks, and the 2018 Diageo Special Releases featuring both an unpeated 15-Year-Old and an exceptional 35-Year-Old peated expression.

Just poured a wee dram and got hit by a waft of smoked teas and a whisper of gorse flower – lovely unfurling wispy smokiness 🌫️. The palate feels bright and citric, with lemon peel, grapefruit pith and a touch of hessian, all wrapped in delicate notes of dried lavender and dried flowers. There’s a briny goodness, like seawater and beach pebbles, plus a fragile minerality and chalk that gives it a chiselled edge. Adding a splash of water really propels it up a notch, bringing out the beautiful fruitiness and a superbly sharp, elegant finish that feels long and soft. Overall, a lot of pleasure here – purity, freshness and that something 'extra' you can’t quite put your finger on. 🌊🍋

Just poured a dram and got hit by a wave of seawater and chalk, like walking on beach sand at sunrise. There's a bright citrus kick – grapefruit, lemon peel, more citrons – with a delicate hint of Earl Grey tea and bergamot that feels like a fragrant breeze. A touch of hessian and dried lavender adds earthiness, while unfurling wispy smokiness and brittle smoke swirl in the background. Minerals and seaweed give that briny goodness, and the finish is long, superbly sharp, with green acidity and ever so slightly tart notes. Water really propels this one comfortably up a notch, elevating the purity and precision balance. Feels elegant, chiselled, raw yet soft – a lot of pleasure here, something extra that makes me smile. 🌊🍋

This one's got a proper coastal feel to it, like standing on the beach with the wind in your hair. There's this bright, lemony kick upfront – almost like grapefruit peel but softer – and then the minerality kicks in, all chalk and beach pebbles. I can taste hints of seaweed and dried flowers, maybe a bit of Earl Grey tea in the background. The smoke's there too, but it's not heavy, more like the ghost of a bonfire on the sand. It's surprisingly fruity as it opens up, with bergamot and a touch of citrus dancing around. The finish is long and drying, but in a refreshing way, like a seaside walk after rain. There's something 'extra' here, a real precision to it, balancing the sharpness with a creamy softness. Just lovely, really – full strength but still elegant. 🌊

Really enjoyed this one. Very precise and bright — loads of bergamot and grapefruit on the nose, almost like a good Earl Grey tea brewing. There's this lovely gorse flower fragrance that keeps things elegant. Palate-wise it's surprisingly fruity, with a sharp citric kick that's really well controlled. Softens out nicely though, with a gentle chalky minerality underneath. I'm picking up beach sand and a hint of seaweed — that coastal thing is lovely 🌊 There's something 'extra' in here that I can't quite pin down. Maybe the dried flowers? It just elevates the whole experience a notch higher than you'd expect. The finish is long and fresh, with lemony notes that hang around beautifully. Touches of green acidity keep it lively without being tart. Honestly teetering between 88-89 for me. It's extremely attractive stuff — just has this general freshness and fragile minerality that's really satisfying. Would happily pour another glass 😊

Gosh this is something special 🌊 Just poured myself a glass and wow – it's like standing on a pebbly beach with bath salts and drying seaweed catching the breeze. There's this gorgeous zesty grapefruit note, almost like sucking on a lemon peel, with chalky minerals underneath. Really raw and chiselled feel to it, full strength but somehow soft. The smoked teas and bergamot come through like someone's brewing Earl Grey right next to the shore ☕ and there's this brittle smoke just unfurling wispy and delicate in the background. All so bright and elegant, that citric acidity keeping everything sharp and tidy. Honestly a lot of pleasure here – just sits beautifully balanced, pure and precise. Something a little extra that I can't quite pin down. Extremely attractive dram.
