Caol Ila, founded in 1846, stands as one of Islay's most iconic distilleries. After gaining prominence through Diageo's Flora & Fauna and Rare Malts series, Caol Ila was officially launched as a standalone single malt whisky brand in 2002, introducing a comprehensive core range. Today, approximately 15% of the distillery's production is reserved for single malt bottlings, while the majority serves as crucial components in Johnnie Walker blends, particularly the flagship Black Label. This strategic importance led Diageo to select Caol Ila as one of four distilleries for its £1.5 billion Four Corners project, alongside Cardhu, Clynelish, and Glenkinchie. The initiative includes a major visitor center upgrade, with Caol Ila representing the signature peated character of Johnnie Walker. The new visitor experience, opened in 2020, features a tasting bar with panoramic views of the Sound of Islay, a dedicated parking area connected by a pedestrian bridge leading directly to the facility. The distillery operates with a 12.5-tonne full-lauter mash tun, eight wooden washbacks (two updated in November 2019) and two stainless steel washbacks, along with three pairs of stills. Production schedules vary between five and seven days weekly, yielding 16 to 26 mashes respectively. Fermentation times range from short (55 hours) to long (120 hours) periods. While renowned for its distinctive peated style, Caol Ila also produces an unpeated variant, both distilled to 72-63% ABV. The core range includes Moch (NAS), 12-Year-Old, 18-Year-Old, and 25-Year-Old expressions, plus the Moscatel-finished Distiller's Edition and cask strength releases. Special editions include the 2019 Feis Ile 10-Year-Old, matured in American oak ex-bourbon and refreshed European oak casks, and the 2018 Diageo Special Releases featuring both an unpeated 15-Year-Old and an exceptional 35-Year-Old peated expression.

There's this smoky wort thing going on, really intense, almost like they've burned pine cones and ropes in the cask. The texture is oily and tarry, reminds me of lanolin or those oily rags my granddad kept in the shed. As it opens up, you get these meaty notes – think pork scratching and langoustines grilled over a driftwood fire. Hints of smoked olive oil and frying pancetta dance around, with a subtle herbal bite, like chopped green herbs and old rope. The peat is there but not overpowering, more of that waxy quality you'd find in a 1990 Ardbeg, if you catch my drift. It’s salty butter and pink sea salt on the nose, then this halfway house between a stormy sea and a bonfire. The finish is long, leathery, and lightly ashy, with a bright lemony aftertaste cutting through. Honestly, it’s like someone bottled a Highland beach in winter – raw, precise, and proper complex. 🥃🔥

Blimey, just cracked open this dram and it’s proper captivating complexity right off the bat 🥃 Beautifully concentrated first, with that almost waxy peaty quality, lightly ashy, hints of iodine and a glisteningly tarry little edge. Then you get that wonderfully intense oiliness, almost like smoked olive oil, with chopped green herbs and a proper herbal kick, even a little camphor and sandalwood peeking through. Got meaty notes of pork scratching, salty butter, briny and lemony aftertaste, plus that pickle brine zing, even tastes a bit like frying pancetta and fresh langoustines drizzled in that oil. There’s rope, pine resins, lanolin, even a faint hint of oily rags and soot, plus that tautly structured minerality that’s so textural and direct. Sort of sits halfway between that early 80s style and mid-90s vibe, y’know? Properly long finish too, with petrol, heather ales notes, smoked teas, seashells, even a little mentholated herbal mouthwash kick at the end. Greater degree of precision and purity than I thought, bloody elegant. Even gets a little ink and smoky wort hint at the very end, like raw sourdough almost? So good.

honestly this dram’s just blew me away 🥃 first you get that glisteningly tarry, oily rags hit mixed with smoked olive oil and that strangley nice putty note, then the brine kicks in - pink sea salt, seawater cut with petrol, even a hint of anchovy paste if you focus? 🤔 middle brings heather ales, chopped green herbs, lightly ashy smoked cereals vibe, plus sandalwood and pine cones, that herbal mouthwash mentholated bit too with a drop of water it gets brighter, more youthful, tautly structured minerality comes through, briny and lemony aftertaste lingers for ages, hints of iodine and frying pancetta, even that almost waxy peaty quality that’s so smooth halfway between that old early 80s style and mid-90s feel, so many different vibes rolled into one, oily and tarry aspects mingle with sooty smoked wort, langoustines and salty butter notes too, it’s just so beautifully concentrated and elegantly complex, innit?
