Oh this is lovely - so much going on but it all hangs together beautifuly. First hit is this clean, fresh greenness, like walking through damp grass by the coast 🌊 Then the peat comes in, really elegant, not punchy at all. Still feels zesty and coastal, a bit like oyster juice and wet rocks.
There's a lovely richness here though - fresh butter, a touch of vanilla, maybe some walnuts in the background. Yet it stays so fresh and lemony. Really perfect balance. The sweetness is there, just the right amount from the sherry I reckon, but it doesn't make it flatter at all.
Medium long finish - the lemon sticks around, there's a mineral thing happening, and just a whisper of cloves. Incredibly drinkable, pure, and everything just feels in the right place. 👌
