Chichibu Distillery represents one of modern whisky's most compelling revival stories. Founded in 2007 by Ichiro Akuto, grandson of Hanyu Distillery's founder, this craft distillery is located in Chichibu, Saitama Prefecture—approximately 100 kilometers northwest of Tokyo. Production commenced in February 2008, marking the return of the Akuto family's whisky-making legacy. The distillery embodies the intersection of Scottish tradition and Japanese craftsmanship. Its compact production setup includes a small mill, a single mash tun, and uniquely, several fermentation tanks crafted from Japanese oak (mizunara)—a rarity in whisky production that imparts distinctive character. The twin copper pot stills, commissioned from Scotland's renowned Forsyths of Rothes, are deliberately small-scale, promoting robust flavor development through increased copper contact. Maturation occurs in traditional dunnage warehouses, where the humid continental climate of Saitama—with its dramatic seasonal temperature variations—accelerates aging dynamics. Ichiro Akuto employs a diverse cask regimen including ex-bourbon hogsheads, sherry butts, puncheons, and Japanese oak casks, often finishing whiskies in innovative wood types. Every expression is bottled without chill filtration or artificial coloring, preserving the spirit's authentic character. Chichibu has rapidly ascended to cult status, with its limited releases—particularly under the 'Ichiro's Malt' label—commanding global attention and embodying the precision, innovation, and artistry of new-generation Japanese whisky.

Popped a dram out, and it hit the palate like a little bizarroïd mix – a bit odd, but oddly charming. The malt was clearly in charge, giving a rich, medium body that felt more than average. I tasted a whisper of raspberry bread and a hint of thin mints, almost like biting into a sweet pastry. Then came the sour red fruits and a subtle splash of apricoty straw, with a dash of cloves that felt surprisingly comforting. I could almost picture a panettone on a sunny day, with peonies and a touch of caraway butter floating in the air – a quirky, pleasant adventure in a glass. 😊🍻

proper wacky little malt this, innit? 😂 first you get orange blossom, then these sharp Seville orange notes mixed with raspberry bread and a hint of caraway butter? proper strange combination but it works! there’s a bit of crystallised orange, thin mints too, and that smooth Kenny G. of malt whisky vibe just rolling through. splashed a bit of water and water saved it on the palate, calmed all the zesty bits down. you can taste the PX and Port influence too, little hits of cassis buds, nutmeg, even a whiff of apricoty straw like you’re in a field. it’s a proper bizarroïd mix but bloody refreshing, finish is medium, not too long, leaves a hint of panettone and sour red fruits on the tongue 🥃
