Loved this fresh, characterful little one – straight in the nose with williams pears, peaches and a hint of gravenstein apples, plus vanilla and a whisper of elderberry eau-de-vie. More wood than I expected, first fill oak never really came through but gives a medium body. A touch of chalk, drops of seawater and white asparagus instead of turnips give it a pretty coastal feel, not quite on iodine or oysters but oysters this time? A little white wine note and a dash of turmeric linger. Way better when au naturel, with a little ale on the side for good fun. Small whiffs of tomato leaves and gentian pop up, finish slightly smokier, incredible freshness. 🌿🥃
