Straight from the glass, this one hits you with something almost fizzy and fermentary — lemons, green apples, a bit like lemon drops and white wine all jumbled together. Feels younger than I expected, a touch hot and raw neat, like biting into a cut cactus or something. 🍋 Add a splash of water and it opens right up. Sourdough, porridge, sour bread — very much that coastal, close-to-nature thing going on. A whiff of damp old magazines, wet plaster, maybe a little soot in there too. Then underneath, some rooty sweetness and a hint of saltiness creeping in, whelks and raw grasses, very much the seaside on a grey afternoon. The finish is long and a bit chalky, with that verbena and chartreuse herbal edge poking through. There's even a flash of kirschwasser and clafoutis mid-palate if you sit with it — almost like a French cherry pudding had a wander up the Scottish coastline. 😄 Brussels sprouts and malt on the tail end, which sounds mad, but somehow it works. Proper coastal character coming through now, no mistaking it. Really enjoyable dram, just needs a wee bit of patience to settle down.
