"Kavalan" is the old name of Yilan. The Kavalan Distillery was born on Taiwan, this beautiful island, in the Lanyang Plain where mountains and sea converge. The distillery's stills are crafted from copper, which removes sulfides produced during fermentation. During distillation, the heart cut is carefully selected, creating a new make spirit with rich floral and fruity aromas and a smooth mouthfeel. After distillation, the new make undergoes maturation, absorbing various natural aromas through the baptism of oak barrels, producing a beautiful amber hue, while the alcohol strength gradually decreases over time, making the taste more mellow. Before bottling, the blended whiskey is filtered to remove impurities, creating a whiskey that is both distinctive and representative of the distillery's character.

Quite an easy sipper, really. Loads of raisins, peach jam and marmalade straight away, with that honeyed, sweet sherry thing going on. Gets a bit Jaffa cake-ish after a minute, then some ginger and pink pepper warmth, but nothing too fierce. Round, smooth, a touch compote-y, and honestly rather cosy 😊

Dark amber in the glass, and honestly it really rocks. I get old wine cellar, wood fire, a bit of coal tar, then ripe peaches and old apples trying to push through. It’s rich but not a fruity one, more between the fruits and the spices, with walnuts, roasted chestnuts, smoked tea and a touch of menthol. The finish is long, dry, a bit gamey, like proper wine sauce by the fire. Perfect walnuts in the aftertaste 🥃

挺顺的一杯，甜甜的 sherry 感很明显，有点 raisins、marmalade 和 Jaffa cakes 那种联想。 蜂蜜里带点 pink pepper，微微辛香，不冲。后面还有些 compote-y 的果酱感，甚至一点 Sauternes 那种甜润。整体 medium，rounder，挺 easy-peasy 的，晚上小喝很舒服 🙂

Ooh, just had a sip of this lovely whisky. Getting a proper blast of ripe autumn fruits - apples and maybe a bit of pear, you know? 🍎 Then there's this gentle smokiness underneath, kinda like a distant bonfire. Not too intense, mind. And aye, there's a rich, creamy vanilla note coming through too, almost like butterscotch. A proper warming one, this. Bloomin' delightful on a chill evening. 👍
