Blimey, this one’s an absolute beauty! 🥃 First you get that waxy honeycomb, fermenting honey sweetness, lovely oily mouthfeel to start, then bits of herbal teas and pressed flowers peeking through. Little hit of bitter orange peel, miso broth umami, resinous fruits, fir wood and hardwood resins that give it that coiled, dynamic power but it’s still so delicate. Long aged Sauternes notes, dark fruit chutneys, that nicely bitter edge, even a wee hint of cannabis oil, fir needles and heather ale on the finish. Little nod to old school medicines in the back end too, weirdly charming. Wave upon wave of pleasure innit, superbly complex, you keep finding new layers every sip, smells a bit like waxed canvas too? So good.
