First sip hits with a sharp sourness from the wood, like biting into old walnuts galore. The nose is deep gold, vegetal notes of morels and mushrooms peek through, with a hint of hydrocarbons. On the palate it’s austere and superbly dry, sherryness taking off after a while, bringing leather, humus and a touch of vin jaune. Bitter caramel and herbal hints of rosemary thyme linger, finishing long and dry, less oils and greases than I expected. Still very enjoyable 😊

Poured a glass of this deep gold liquid, and the nose immediately hit me with a walk through an autumn garden – thyme, rosemary, that damp mushroom smell after rain, and a real sense of old, dead leaves. There's this underlying humus, almost like rich earth. It's superbly dry on the palate, almost austere. Gets you with a little bitter kick, reminiscent of walnuts that have been in the cupboard a bit too long, and some leather. But there's this wonderful, gentle sourness from all that time in wood, balancing things out. The sherriness really blooms after a moment. Texture is interesting – less oily than you might expect, but still very enjoyable. The finish is incredibly long. It fades into something like a very old amontillado or even vin jaune, with quite some old rancio, bitter caramel, and a distant hint of lemon marmalade. For something that's spent a lifetime in a cask, it's still wonderfully coherent. 🌿🌰

Right then, this whisky's got a lovely smooth taste, innit? 🥃 Rich and warm, with hints of vanilla and a bit of smokiness. Really settles well on a chill evening. Sometimes I notice some fruity notes too – maybe apple or pear? Quite moorish, can't stop sippin' it. 😋
