First sip hits with a sharp sourness from the wood, like biting into old walnuts galore. The nose is deep gold, vegetal notes of morels and mushrooms peek through, with a hint of hydrocarbons. On the palate it’s austere and superbly dry, sherryness taking off after a while, bringing leather, humus and a touch of vin jaune. Bitter caramel and herbal hints of rosemary thyme linger, finishing long and dry, less oils and greases than I expected. Still very enjoyable 😊
