Poured this deep gold dram tonight, and bloody hell, it’s definetly not for the faint-hearted. Brutal when neat with a bit of a sulphury side, but they’ve kept the off-notes at bay. It’s packed with very tight oloroso-y flavours, old walnuts and walnut wine. With a drop of water it gets rounder, showing off some Guinness and salty oyster sauce, almost bouillony. Then it goes all sweet and nutty with roasted peanuts, halva, turon, and a bit of macchiato and café latte. Bags of caraway and lovage too, like green cigars. Super long finish. Quite a knack to getting this balance right. 🥃
