Caol Ila, founded in 1846, stands as one of Islay's most iconic distilleries. After gaining prominence through Diageo's Flora & Fauna and Rare Malts series, Caol Ila was officially launched as a standalone single malt whisky brand in 2002, introducing a comprehensive core range. Today, approximately 15% of the distillery's production is reserved for single malt bottlings, while the majority serves as crucial components in Johnnie Walker blends, particularly the flagship Black Label. This strategic importance led Diageo to select Caol Ila as one of four distilleries for its £1.5 billion Four Corners project, alongside Cardhu, Clynelish, and Glenkinchie. The initiative includes a major visitor center upgrade, with Caol Ila representing the signature peated character of Johnnie Walker. The new visitor experience, opened in 2020, features a tasting bar with panoramic views of the Sound of Islay, a dedicated parking area connected by a pedestrian bridge leading directly to the facility. The distillery operates with a 12.5-tonne full-lauter mash tun, eight wooden washbacks (two updated in November 2019) and two stainless steel washbacks, along with three pairs of stills. Production schedules vary between five and seven days weekly, yielding 16 to 26 mashes respectively. Fermentation times range from short (55 hours) to long (120 hours) periods. While renowned for its distinctive peated style, Caol Ila also produces an unpeated variant, both distilled to 72-63% ABV. The core range includes Moch (NAS), 12-Year-Old, 18-Year-Old, and 25-Year-Old expressions, plus the Moscatel-finished Distiller's Edition and cask strength releases. Special editions include the 2019 Feis Ile 10-Year-Old, matured in American oak ex-bourbon and refreshed European oak casks, and the 2018 Diageo Special Releases featuring both an unpeated 15-Year-Old and an exceptional 35-Year-Old peated expression.

Came home after a long day and poured myself a dram. First thing that hit me was this assertive wave of kelp and sea water — very coastal, almost like standing on a pier somewhere in Scotland. There's a discreet lactic side to it too, reminds me of mussels stewed in almond milk, oddly comforting. Then it shifts. Got this lovely pâte de lemon thing going on, mixed with quince jelly and a touch of sour chutney. Quite the combination, honestly. There's also something almost savoury — like a feeling of bouillon, or maybe tinned anchovies and sardines on toast from the cupboard. Not unpleasant, just… interesting. The mid-palate gets a bit fragile and uncertain, medium in weight. I'm picking up soft green oak and hessian, like old workshop smells. Then there's this herbal side — sour/bitter herbal teas, a hint of liquorice wood, even a wee drop of pastis lurking in the background. Some tobacco leaves too, drying in the sun. Finish goes on with embrocations and kippers, quite smoky and medicinal. Excellent stuff overall — really got me thinking. 🥃 Some folks say all those Islay drams age gracefully, but honestly after a few glasses, who's even keeping track anymore? 😄

Right then, poured myself a dram and let it sit for a bit. The nose is this lovely mix of salt air and something floral, almost like quince jelly, but underneath there's a whiff of sea water and wet rope. A bit of tobacco leaf comes through too. First sip... wow, it coats the mouth. There's a definite maritime character, salt and kelp, but then this surprising sweetness like fresh almonds or stewed mussels in milk. It’s all quite assertive yet somehow discreet. The middle has this soft, green oak feel and a bit of that sour/bitter herbal tea note, maybe a touch of liquorice wood. There's a slightly sour chutney quality balancing it out. The finish is where it really shines, though. It takes off slowly but surely. You get this delicate, almost fragile aftertaste of hessian and a ghost of mercurochrome, which sounds odd but works. It’s excellent, really complex. Everything’s well in place! 🥃

Fresh almonds and sea air straight away 🌊 A bit medicinal, like old-school embrocation, then salty kippers and a wee anchovy thing. Slowly gets greener: liquorice wood, herbal tea, soft oak, a touch of pastis. There’s lemon paste, quince jelly, and a faint milky edge too. Quite assertive but not shouty. Briny, savoury, and nicely coastal. I’d sip this on a cold evening, no rush.

Proper smoky this one 🥃 Reminds me of bonfire night tbh Honey sweetness hits ya straight away, then theres this lovely vanilla warmth that just coats ur mouth. The oak defintly comes through - gives it real depth Theres a bit of spice at the back, maybe some dark fruit? Like cherries or somethin. That sherry sweetness is lovely, so smooth goin down Reckon this is a winter dram for sure. Rich, heavy, warming - perfect for sippin by the fire 🔥 Would defo have another glass of this 👌
