Starts a bit nervous, then turns unexpectedly rounder and gentler, almost easy-going 😊 I get smoked cider, orange wine, apple peel and lemon juice, with green peppercorns and bitter herbs hanging around underneath. There’s a lovely dirty side too: paraffin, engine oil, cold cigar smoke, used fireworks, a touch of liquid tar, but not massively tarry. A splash of water works beautifully, bringing sweet barley, brown sugar and a little mead. Long finish, salty smoked fish, fresh parsley, and that balsamic tang in a good way. Proper wee trip in a glass.
