Blimey. That first whiff is like a blast of sea spray hitting hot pebbles, then this sharp lemon-and-coal-smoke combo roars through. It’s peculiar, in the best way—almost almondy, then it tips into ashes and something deeply savoury, like roasted bone marrow. The palate’s delicately smoky, with a weird but brilliant liquorice-wood note, then oysters—smoked ones, drenched in wine vinegar. There’s a menthol tingle, a bit of mashed turnips and celeriac, then it goes all extreme mezcal and Tiger Balm. Pickled samphire cuts through, leaving an almondy and lemony aftertaste that’s stunning, with a proper tincture of iodine kick and lemongrass. It just roars, then settles into a long and very salty finish, like licking a limy oyster shell. Burning fir wood, heather smoke, soot and straw all mingle. With a splash of water it gets gentler, more medicinal, but still perfection in its very own genre.
