Aye, this one’s got a real kick to it – opens with a wave of vanilla and these tart green apples, like biting into a crisp autumn day. There’s a whisper of rhubarb and asparagus in there too, strange but lovely, like a garden in spring. The malt’s proper thick, almost porridge-like, and it’s got this long, citrusy finish with grapefruits lingering. Not sure what oak it’s been in, but it’s not shy – peppery ashes and a smoky backbone that roars through the back of your throat. WF 85? Sounds fancy, but it’s just a solid dram. The ‘white’ fruitiness – white cherries, fresh quinces – it’s clean, almost like a pale white wine. Bitter almonds sneak in towards the end, and that 2016 vintage gives it a touch of age, but not too much. Rather more smoke than I’d expect, though it’s kept in check by this minty freshness. Coastal pears? Maybe a hint of sea air, but not overpowering. It’s a big, spicy beast, this one. Didn’t go down the easy path – a bit of a grower – but it’s got character. The ‘regular’ Wolfburn style’s there, but this batch’s got something extra. A right proper dram for a chilly evening 🥃
