Hey, you know what? First thing I got was a really pretty nose – something floral and delicate, maybe a bit like mullein flower liqueur? There's a lovely touch of Sauvignon Blanc in there too, that crisp, green apple note. On the palate, it leans a bit sweeter than I expected. There's a whisper of dill, which is interesting – it sort of comes and goes. I get some white currant tartness, and underneath it all, a softness I guess is from the grain blend. Then there’s this curious thing – a faint, wet chalk minerality right at the back. It’s not off-putting, just… there. And I swear I get a tiny hint of something like Malibu, a ghost of coconut. 🥥 I think the idea to bottle this at 45% was brilliant. It keeps all these flavours – the first fill barrel sweetness, the slightly out-of-vogue herbals – from being forgotten or blown away. Really rather special.
