Bimber Distillery, established in 2015, was the first new single malt whisky distillery founded in London in over a century. It uses locally sourced British barley, undergoes a seven-day fermentation period in oak washbacks, and employs direct-fired heating for both its wash still and spirit still.

Right then, settled down with a glass. 🥃 Nose is quite lovely, got that warm vanila scent. Hint of smoke too, very subtle. Taste is smooth, no harshness at all. Feels like sitting by the fire on a cold night. 🔥 Finish lingers a bit too quik maybe? But still nice. Proper good dram for the evening innit. Cheers! 🍻
