Quite a cosy dram, really. I get fresh sourdough and warm mash first, then a custardy bit with straw and polenta in the background. After a perfect rest it turns more rooty, a touch like beets, with a soft sake-ish sweetness and a wee Weissbier tang. The smoke stays nicely self-restrained, and the finish hangs about for ages with a slightly bitterish aftertaste 🙂
