Well, that first sip is a real lemony attack, sharp and incisive. It then mellows into these glorious cooked orchard fruits – lots of baked apples and a lovely apple and quince compote vibe. I’m getting some beeswax and a hint of ground cinnamon, too. There's a touch of pears and plums in there, nicely balanced. It’s a very, very lovely thing, fruity and almost like a mead or a fruity beer. Not overly complex, but just a well-balanced, absolutely beautiful dram. There’s maybe a faint hint of cardboard on the very end, but the medium length finish is all cooked fruits and a touch of flint. A proper cracker of a pour. 😊
