Right, so this dram – first sip, you get this rubbery hit, almost like new bike tyres, then wham, grapefruit juice tartness. It's all twists and turns, honestly; one moment it's smooth like porridge, next you're hit with metallic tones that make it a bit tiring. Violets and sauna oils creep in – floral and steamy, very unusual. Seawater and smoked cold-cuts remind me of a coastal barbecue, totally against that ultra-clean Islay vibe. Sour wines and wine vinegar give it a tangy edge. The finish is very long, with roasted chestnuts and lemon yoghurt. Notes of muscadet and smoked chocolate with polenta pop up, weird but fun. Fino sherry makes it peatier. Acetic tones here and there, but overall, it's exceptional. Greenest walnuts and raw yoghurt add a fresh twist. It's gold in colour, scary good, dissonant yet somehow works. Lemon and walnuts combo, a classic Islay sherry style. Salty end leaves you thirsty for more. Quite the rollercoaster! 😊
