Piers Distillery was founded by Dr. Jonathan Lyons, a biochemist who developed a passion for brewing and distillation in the 1990s. After establishing an experimental distillery in Kentucky, USA to master American whiskey traditions, Dr. Lyons turned his focus to Ireland, where he built a distillery dedicated to Irish whiskey production. Piers Distillery combines American innovation with Irish heritage, utilizing custom copper pot stills and a unique triple-distillation process. The brand currently offers four core Irish whiskey expressions: 'The Scholar' (a blended whiskey aged in ex-bourbon and Oloroso sherry casks), 'Pot Still Legacy' (a traditional single pot still), 'Cask Strength Reserve' (a non-chill filtered single malt), and 'Coastal Cask' (finished in Madeira wine barrels). Piers emphasizes sustainable partnerships with local Irish barley farmers and a grain-to-glass philosophy.
