Mellow Corn Whisky de Maíz

Mellower Corn Whiskey is a distinctive American spirit that strictly adheres to U.S. federal regulations for corn whiskey, featuring a mash bill containing over 80% corn. Unlike traditional bourbon which must be aged in new charred oak barrels, this exceptional whiskey is matured for four years in once-used bourbon barrels, resulting in a notably lighter amber hue and a more delicate flavor profile. This production method sets it apart from typical bourbon and other American whiskeys. Evan Hill Distillery stands among a select few distilleries in the United States that continue to produce this rare style of corn whiskey, preserving a traditional approach that showcases the pure expression of corn with subtle secondary wood influences.
