Eden Mill Distillery, located in the historic town of St Andrews, Scotland, is the nation's only combined brewery and distillery. Shunning modern automation, Eden Mill embraces traditional craftsmanship where master distillers and brewers rely on keen observation and sensory expertise to guide production. Their flagship offerings include: ① Shipwreck IPA (6.2% ABV), named after the legend of John Honey who rescued five sailors from a shipwreck at the mouth of the River Eden; ② Bourbon Barrel Beer (6.5% ABV), matured in bourbon whisky casks for complex flavor development; and ③ Islay Oak Aged Beer (7.0% ABV), finished in Islay whisky barrels for distinctive peaty character.

History

Eden Mill was built on the site of the Seggie distillery, founded by William Haig in 1810 and later taken over by his brother John. John acquired the Cameronbridge distillery in 1824. Some original buildings remain to this day. Seggie whisky was recorded as part of Arthur Bell's Perth blend in 1857. The distillery operated until at least 1865 (when John Haig formed the Scotch Distillers Association, later D.C.L.), and in 1872 it was converted into a large paper mill, operating until 2008. The original site was subsequently purchased by St. Andrews University. A consortium led by Paul Miller, former sales director of Molson Coors and marketing director of Glenmorangie distillery, leased part of the old mill, opened a craft distillery in 2012, and increased whisky and gin production in November 2014. In 2015, it produced 100,000 litres of pure malt spirit, and the owners have no plans to increase capacity: 'We don't do mass production. We only fill a handful of pig's head casks each week that can be counted on one hand. Less is good!' In addition to whisky, Eden Mill also produces various craft gins. In early 2018, the distillery began relocating, moving 70 meters north from its current site into the original distillery building.

Curiosities

Eden Mill employs five master distillers with academic degrees, with each distiller producing the equivalent of one hogshead per week. They firmly believe their 'gold content' per liter of spirit (measured by the quality of distillers) surpasses that of all other Scottish distilleries! Eden Mill is also pioneering developments in blended whisky and small cask maturation, investing significant time in this pursuit. They have released blended whiskies showcasing differences in finishing across four cask types: original Oloroso sherry casks, American virgin oak casks, European oak casks, and quarter casks. Remarkably, two of their master distillers are also professionally trained coopers.
