Our beginning is not just the story of how Still Waters Distillery came to be, but the story of the grassroots of micro-distilling in Ontario. More than a decade ago, we saw the rise in popularity of micro-distilling in the United States and we thought there was an opportunity to open Ontario's first such enterprise. At the time, there were no very small distilleries in the province and only a handful of micro-distilleries already operating in other places across Canada. As long-time aficionados of whisky, we thought we could apply our textbook knowledge of whisky-making and our many years of combined business expertise to launch Ontario's first micro-distillery.
