Founded by Philip and Simon Thompson in 2015, Dornoch Distillery is located in the Scottish Highlands with a mission to revive historically authentic, pre-industrial whisky styles that have long been extinct. The distillery employs heritage barley varieties, extended fermentation periods, and direct-fired stills to recreate the robust, complex character of 19th-century single malt whisky.
